THE NEW CHALLENGE
IN THE CHILDHOOD OBESITY EPIDEMIC
The new challenges associated with designing and formulating an appropriate chocolate milk product for children include acceptability, in terms of taste and mouth-feel, nutrition profile, and most importantly, the metabolic response associated with the ingestion of flavored milk products, Progenitor Fat Cells in children, and the adaptation mechanisms related to childhood obesity. Successful interventional methods in presenting novel chocolate milk products for children that incorporate each of these crucial issues have not been forthcoming on a global scale, nor on a National scale.
